Broadway Mesa Village recently marked the extraordinary journey of beloved resident Vivian B., who recently celebrated her 105th senior birthday at Broadway Mesa Village. We were privileged to share in this remarkable milestone for a life, well-lived. The three-day event was much more than just a short gathering – our team members created a testament to the vibrant spirit and enduring strength that defines our senior community. Reaching the age of 105 is an inspiration, and her celebration was fun, exciting, surprising…and pretty loud, actually!

Day One: Dancing Like There’s No Tomorrow

On August 31, 2023, family, friends, residents, and team members gathered at Broadway Mesa Village to wish Vivian a happy birthday. The guests danced to live music, enjoyed special treats, and the guest of honor opened some of the 1,700+ birthday cards she had received.

Day Two: A Community Parade

Vivian’s senior birthday continued outdoors the next day with a parade and greetings from the City of Mesa Firefighters and local government officials. Sitting on a comfortable couch and wearing a rhinestone crown, she watched the parade and received her visitors with a smile. Vivian was presented with gift baskets, flowers, and one-on-one time with the local fire chief and police department representatives. She was thrilled to be the focus of attention that day and received plenty of compliments and hugs.

Day Three: A Motorcycle Ride

On September 2, Vivian was seen on her feet, waving to members of the Christian Motorcycle Association as they drove by Broadway Mesa Village’s entrance with their lights flashing. After the men and women participating in this procession parked, they greeted Vivian with hugs and a card.The group also prayed together and when that ended, the guest of honor asked for a motorcycle ride; she was given a helmet and helped onto the seat. Vivian was all smiles as her driver revved the engine and took her for a spin – she even mentioned her “helmet hair” afterward!

Vivian’s journey began in 1918, and she has witnessed a century of countless changes and evolution. Friends and family gathered to honor this incredible woman, creating an unforgettable three-day senior birthday party. One cannot help but wonder what the secret to her longevity might be, though. The timeless values of love and laughter cannot be emphasized strongly enough here, and they help guide seniors through life’s ups and downs.

What is National Culinary Arts Month?

July is the time to applaud the chefs and cooks who make life a tasty experience for those of us who are not culinary-gifted. Preparing food involves so much planning, work, and detailed dedication. Cooking is an art, and we should celebrate it. Cheers to the culinary teams of America!

Celebrate National Culinary Arts Month at home by learning to cook a new dish. Grab some fresh local ingredients and try to make a meal that looks as good as it tastes. Creating a delicious meal is only half the battle when it comes to the artistry of good food.

Building Community One Dish at A Time

Pegasus Senior Living takes food seriously. Many members of our culinary teams recently got together for a two-day cooking competition and conference on food-prep best practices.

One aspect of our culinary experience is resident input. The Dining Service Director of Gig Harbor Court, Chef Rahfiki, hosts monthly forums with residents to discuss menu options. These discussions are regular occurrences throughout all communities and give our dining experience an edge.

The restaurant-style dining rooms in Pegasus communities give older adults a great place to build community spirit and fuel up to attend our various activities, outings, and events.

Our communities provide senior housing for older adults in all stages of life. Providing proper nutrition is one more aspect of senior care. Being a senior living chef is no easy task. In addition to cooking for a variety of palates, our Dining Service Directors also have to account for meals that taste great and are:

  • Low in sodium
  • Low in fat
  • Low in sugar
  • High in dietary fiber
  • Heart-healthy

Older adults don’t need to consume as many calories as younger people. Seniors should eat well-balanced meals, and every calorie should count. Having chef’s who understand this process is another way our communities provide superior senior care.

What is the Alzheimer’s Association?

You’ve likely seen the purple ribbon supporting those facing Alzheimer’s. The purple ribbon symbolizes the calm stability of blue and the passionate energy of red, qualities anyone who’s acted as a caretaker can understand.

Four decades ago, when little was known about Alzheimer’s and research was next to non-existent, a group of home caretakers took it upon themselves to find answers:

  • The Alzheimer’s Association was founded in 1980 as a way to unite caregivers, provide support, and advocate for research.
  • It is the leading volunteer health organization advocating for this form of dementia.
  • Their mission: To discover a world without Alzheimer’s and all other dementias.

“The first survivor of Alzheimer’s is out there, but we won’t get there without you,” says the association. With 50 million people across the globe currently living with Alzheimer’s, the time to find a cure is now.

What is Alzheimer’s?

Thanks to the Alzheimer’s Association research, we know that Alzheimer’s occurs due to a buildup of plaque and nerve cells tangling in the brain. Over time it causes the brain to shrink and affects all functions of this vital organ. A person can live for years with this process before ever knowing they have it. Below is a chart of typical changes that may occur in stages. It is important to note that each person is an individual and their journey may differ from another’s.

Early Stage
  • Difficulty remembering names when introduced to new people
  • Forgetting material that was just read.
  • Losing or misplacing a objects
  • Increased difficulty with planning or organizing
  • ​Changes in ability to manage daily life
Middle Stage
  • Forgetting events or personal history
  • Mood changes under stressful situations
  • Unable to recall their own address or telephone number
  • Confusion about where they are or what day it is
  • Increasing need for assistance in the bathroom
  • Trouble controlling bladder and bowels
  • Changes in sleep patterns
  • Tendency to wander and become lost
  • Personality and behavioral changes, like suspiciousness, delusions, or compulsions
Late Stage
  • Needs 24/7 assistance with daily personal care
  • Unfamiliar with recent experiences and surroundings
  • Changes in physical and mobility abilities
  • Difficulty communicating
  • Vulnerable to infections, especially pneumonia

This fall, the organization looks forward to returning to hosting the Walk to End Alzheimer’s in-person across 600 communities nationwide. There is no fee to participate in the event, but registering and organizing donations for the cause is encouraged.

How does Pegasus make eating healthy fun for residents?

The Life Enrichment Directors at Pegasus Senior Living work hard to make life enjoyable for the residents. They have recently announced a new initiative called Foodie Friday.

Not only does this provide entertainment for the residents, but it also honors another group of people who work hard for them every day.

What is Foodie Friday?

The delicious food at the many Pegasus Senior Living communities doesn’t just appear. Every community has a team of culinary professionals who take pride in their craft. Toiling away behind the scenes, we are now shining the spotlight on them and their skills and dedication on Facebook using the hashtag #FoodieFriday.

What are some of the Foodie Friday activities that you might find in the Pegasus communities?

As you watch your Facebook feed, you will notice that our communities have gotten in on the social media trend of posting pictures of their dinner, but when you see one, take a moment to look a little closer at these lovingly-created dishes from professional chefs.

Prepare to be amazed by videos of chefs showcasing their culinary creations or demonstrating professional techniques.

Some are even whipping up copycat recipes of favorite dishes from around town!

Chef Joseph at The Farrington at Tanglewood senior living community in Houston, Texas gave us a demonstration of his healthy green and berry smoothies. The green smoothie is so named because everything in it is green, including spinach, and the berry smoothie is a familiar classic. Both were a hit!

Because Pegasus has communities all over the United States, several of our communities are partnering with each other to create meals of “Local Flavors.” From Arizona and Texas in the southwest to New York in the northeast, there is no shortage of local flavors to explore!

Some communities are even engaging in a little friendly competition. First up is Chopped, Pegasus style! Keep an eye out for these videos of our chefs experimenting with what they can make with their residents’ favorite ingredients.

Another competition involves pitting chefs against each other to see who can come up with the healthiest meal with the best flavor. May the best chef win!

Of course it can’t all be fun and games all the time. To keep up our appreciation for our chefs and get some inspiration, we will also be watching cooking shows like Somebody Feed Phil on Netflix and Stanley Tucci’s Searching for Italy on CNN.

Why is proper nutrition important for seniors?

It is no secret that a healthy diet is important for everyone. It can help you manage weight and works as natural medicine to control a variety of conditions. For seniors, this is especially important. When their bodies are properly fueled, they have energy and their immune systems are strong for fighting off potential illnesses. For them, proper nutrition means longevity. At Pegasus communities, you are taken care of for all 3 meals every single day with a variety of entrees, sides, beverages, and desserts to choose from.
What should seniors be eating?

According to the National Heart Association, the bulk of our nutritional needs come from proteins, vegetables, fruits, grains, and dairy products.

Proteins include meat, poultry, and eggs. They should be lean. And they should have the fat trimmed and skin removed. Fish is also a good source of protein. It is prefered that the fish is oily and high in omega-3 fatty acids such as salmon.

Fruits and vegetables can be fresh, frozen, canned, or dried. When choosing your fruits and vegetables, it is important to choose a variety of them to be sure that you are getting a variety of nutrients. One rule of thumb is to “Eat the rainbow.”

Grains make up the bulk of recommended daily dietary intake such as rice or pasta. Whole grains are preferred due to their high fiber content.

Dairy should be low fat or fat free and eaten in a limited fashion.

What about nuts, seeds, and legumes?

Now, I know what you are thinking. What about nuts, seeds, and legumes? What about fats and oils? Those are important too!

You are correct. They are important too! However, they do not make up the majority of our diets. They are to be used rather like condiments, a sprinkle here, a dash there.
